Last Friday when my Internet was acting up and I couldn’t get my regular Highs And Lows post up until late in the afternoon, I posted this photo of the coconut cloud cake I had made last year on Instagram to make up for it. I received so many compliments on how delicious the cake looked that I decided it was due time to whip up something else that was coconut related. I found this recipe on Epicurious and knew that the vanilla bean would be the perfect pairing for the reduced coconut milk that made these cupcakes so moist. I also made some glitter easter egg cake toppers simply by inserting a toothpick into a styrofoam egg and coating them with craft glue. I then shook glitter directly over the eggs allowing any excess glitter to fall onto wax paper so I could easily pour the left over glitter back into the container. Finally I used a paint brush and modge podge to coat the eggs so that no glitter would fall onto the cupcakes.
