Thai food is an open love of mine, leaning towards mild addiction. I came across this recipe for Thai Panang Curry on Pinterest months ago and made it right away. It has since become a staple, each time more enjoyable then the last. I have named the recipe Coconut Red Chicken Curry as I adjusted the recipe from panang curry and tofu, to red curry and chicken.
