Yesterday was my sisters twentieth birthday (where does the times go?), so I figured instead of our usual Cheerios, orange juice and coffee breakfast, I’d make something a little more festive and filling. Of course we still had coffee, but this recipe for caramel apple skillet pancakes fit the bill with seasonally appropriate flavours, and easy throw-in-a-skillet-and-wait ingredients. I ended up swapping out the fugi apples for macintosh and the brandy for bourbon, but I think the results turned out just the same. I feel like this is the perfect fall breakfast. but will also work just as well for upcoming company at holiday brunches.
