This past Sunday I finally had the chance to go apple picking. It was such a great afternoon and although the apples were sparse the time spent out in the country was totally worth the trip. We ended up coming home with three bags full of apples that I knew were going to be used to cook and bake with. Jamie made an amazing pork loin with cooked apples and sweet potatoes the other night so I knew I had to make something sweet to follow-up his dinner. Since thanksgiving weekend is approaching I decided that these mini cranberry apple pies would be the perfect option. They are tart and sweet and would look absolutely adorable packaged individually at everyone’s place setting on.
