Whether you celebrate Pancake Tuesday or not, I see absolutely nothing wrong with enjoying pancakes for breakfast, lunch and dinner at any time of the year. But because today is actually Pancake Tuesday, I felt compelled to whip up a batch of lemon blueberry ricotta pancakes myself after enjoying way to many at Stoneface Dollys during our trip to Ottawa. I followed this recipe but instead of topping our pancakes with fresh raspberries I chose to mix blueberries into the batter and top with fresh whipped cream. These were the best pancakes I have ever made, well actually they were the first pancakes I have ever made as Jamie or my sister are usually on pancake duty, but after these heavenly cakes turned out so good I am pretty sure that these pancakes are going to be on our breakfast menu for a very long time.
