A few Sundays ago, Superbowl Sunday to be exact, we had a small party at our place that we had planned on making pulled pork tacos for. Before the tacos we all binged on chicken wings, chips and dip, and a few different trays. Suffice to say we were all so stuffed from apps that by the time the pulled pork was ready, none of us wanted to eat another bite! We ended up putting it in the fridge for the next day and that was totally okay because having pre-made dinner ready was great! We served hard and soft tacos with bruschetta, avocadocrema, lettuce, cheese, parsley (in place of cilantro), salsa and limes. To go with the Mexican theme I made a simple tequila based cocktail (that I throughly enjoyed) and served everything family style on the coffee table. I had so much fun doing a themed food night that I think more of them are going to be happening around our place!
