Simple Spring Salad With Balsamic Vinaigrette

Happy St. Patrick’s Day! I realize that this salad might not be your go-to menu option on a day that is all about drinking copious amounts of green beer, but if you are feeling not quite yourself tomorrow, might I suggest this salad? I have been trying to add more fruits and veggies into my meals now that the days have been getting longer and the weather is slowly warming up, and this salad was the perfect way to do so. The maple balsamic dressing doesn’t hurt either.







– Mixed greens
-Red Onion
-Sliced Almonds
-Goat Cheese
-I also added grape tomatoes after these pictures

Wash and chop up all ingredients, add to washed mixed greens and top with almonds and goat cheese.


-1 tbsp maple balsamic vinaigrette or maple syrup
-2 tbsp balsamic vinaigrette
-3 tbsp olive oil
-1 tbsp honey
-1 tsp grainy dijon mustard

Whisk all ingredients together, cover and refrigerate if not serving right away.
