Lemon Ginger Cookies with Mint

After I finally got around to planting my herb garden a few days ago (see yesterday’s post), I knew that I wanted to make something in which they would be the star of the show. I decided to use the mint as it was the herb with the most sprigs on it, so I took to Martha Stewart’s website to find the perfect recipe. I found these cookies and I am so glad I did. After they were finished our entire house was full of mint and lemon aromas, which completely brightened up my day. The cookies also taste very light and delicate, perfect for a summer day on the patio with a cup of tea.
