I made this salad a few weeks ago after I was feeling up to standing for a long period of time. I had been searching online for something that was full of flavour and nutrition and I stumbled across this recipe on Gimme Some Oven blog and it shot right up to my must try list. I marinated the chicken for a half and hour while I prepared the dressing, and the salad took all of 15 minutes to prep and assemble. The result had so much more flavour than I had expected for such a heathy salad. I forgot to add the chow mein noodles and edamame in the pictures, but mid-bite I remembered to add them. The noodles gave the salad a great crunchy element which took this dinner from good to great!
