Key Lime Pie In A Jar

Key Lime Pie is one of my absolute favourite desserts to have year round, but I especially enjoy it in the summer when there could be nothing better than the refreshing taste of a tart lime. I have never actually baked key lime pie before so I figured that this easy no-bake recipe would be the perfect way to introduce myself. I love that I can whip this up in minutes if I am having company over and the single serve portions in the mason jars really elevate this desserts simplicity. And let me tell you, it was a good thing that I had friends to give some of these to because I honestly would have eaten every single one.

Ingredients
  1. 1 package pre-made graham cracker crust + 1/4 cup melted butter
  2. 1 can sweetened condensed milk
  3. 1 8 oz package of cream cheese, softened
  4. 6-8 key limes, juiced
  5. 1 teaspoon vanilla
  6. 1 drop of green food colouring
Instructions
  1. Microwave butter until melted and pour over graham cracker mixture (exact measurements will be on the package).
  2. Add softened cream cheese and sweetened condensed milk into a mixing bowl.
  3. Using an electric hand mixer, starting on low, begin mixing the cream cheese and sweetened condensed milk.
  4. Continue to increase speed of mixer until cream cheese and sweetened condensed milk is smooth and creamy.
  5. Add the vanilla and whip together.
  6. Slowly add the key lime juice of a low setting and steadily increase speed until everything is thoroughly mixed and it looks all creamy and luscious. You absolutely do not want clumps at this stage.
  7. Add drop of green food colouring and mix well.
  8. Scoop the mixture evenly into the jars and place in the refrigerator for at least a few hours or over night.
  9. Add whipped cream into a piping bag and pipe small dollops on top of the mini pies. Zest lime overtop.
Notes
  1. To make sure whipped cream stabilizes add a couple tablespoons of powdered sugar
